Operators were manually dumping 2,000 lbs (907 kg) of sucrose—50 lbs (22.7 kg) at a time—into a 300-gallon (1,135 liter) tank, dissolving it, and then pumping the liquid sucrose into 1,000-gallon (3,785 liter) fermentation tanks. The entire process took several hours, required ladders, and posed ergonomic risks.
